A 9-month long pop up restaurant that changes every 30 days? Yeah, why not. At [What Happens When](http://www.whathappenswhennyc.com/?ref=protein.xyz), diners are treated to a new experience every month - lighting, colour, seating and menu all change, there's a grid of hooks fitted to the ceiling ready for whatever light and spatial installations are to come and red tape maps the floor showing what was there before.

[Metrics Design Group](http://www.metricsdesigngroup.com/index.html?ref=protein.xyz) are behind it all. You may recognise their work with Dansk and Bar Artisanal and now they're taking over What Happens When in New York. For February, they've chosen a theme explores an aesthetic that's opulent and colourful.
