# Craft London

“We focus on quality in production by collaborating with modern experts, fanatics and obsessives to craft world class products,” say the owners of the new restaurant, [Craft London](http://craft-london.co.uk/?ref=protein.xyz). “Both the restaurant dishes and the products are created using almost exclusively British produce bought from farmers we know well, always handled with a light, modern, touch.”  
  
It’s this combination of a modern sensibility and local emphasis that makes Craft a restaurant that’s setting British, seasonal food as its main agenda.  
  
Craft is lead by chef [Stevie Parle](http://stevieparle.co.uk/?ref=protein.xyz) (ex-[Moro](http://www.moro.co.uk/?ref=protein.xyz) and [River Café](http://rivercafe.co.uk/?ref=protein.xyz) tutelage). Much of the food from the menu is grown on adjoining land, and Parle’s insistence on British produce means that in-house meat smoking and curing are common occurrences. It's all done in the name of fresh, local produce. The British-led menu even extends to the restaurant’s interior, which acclaimed industrial designer, [Tom Dixon](http://www.tomdixon.net/uk/?ref=protein.xyz) OBE, has crammed with Scottish tweed, British limestone and London-designed furniture and lighting.   
  
Craft London is about more than just localism. The emphasis on carefully-sourced food is part of a growing shift to sustainable consumption. The shift’s not just in [food](https://www.prote.in/en/feed/2015/03/wasted?ref=protein.xyz), but also [fashion](https://www.prote.in/en/feed/2015/03/fashion-conscious?ref=protein.xyz), with consumers seeking out more ethical choices when it comes to their purchases.
